- 2/3 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped celery
- 2 Tbsp. butter
- 1 large can tomatoes
- 1 (8 oz.) can tomato sauce
- 2 cloves garlic, minced
- 2 bay leaves
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 tsp. oregano
- celery salt to taste
- 1 1/2 lb. cooked shrimp
Method
- Saute onions, green peppers and celery in butter. Add tomatoes, tomato sauce and seasonings and simmer for about 40 minutes.
- Add cooked shrimp just before serving.
- Serve over cooked rice. Yield: 4 to 6 servings.
