Ingredients

  • Mozzarella cheese
  • 1 chicken breast per person
  • 2 oz. thin sliced, cooked ham
  • 1 small tomato, chopped
  • 3 Tbsp. dry bread crumbs
  • 1 Tbsp. grated Parmesan cheese
  • 1 Tbsp. dried parsley
  • 1/2 tsp. dried oregano
  • 1/8 tsp. garlic powder
  • 1/8 tsp. pepper
  • 1 Tbsp. skim milk

Method

  • Beat chicken breast with mallet until 1/4-inch thick.
  • Place 1 slice ham, diced tomato and 1 slice Mozzarella cheese on chicken breast.
  • Roll up and place wood skewer or toothpick to hold roll. Dip in milk; roll in mixture of bread crumbs, Parmesan cheese and spices.
  • Place on foiled baking (cookie or shallow) pan.
  • Bake for 20 to 25 minutes.
  • Serve with curried rice and steamed fresh green beans.
