- Mozzarella cheese
- 1 chicken breast per person
- 2 oz. thin sliced, cooked ham
- 1 small tomato, chopped
- 3 Tbsp. dry bread crumbs
- 1 Tbsp. grated Parmesan cheese
- 1 Tbsp. dried parsley
- 1/2 tsp. dried oregano
- 1/8 tsp. garlic powder
- 1/8 tsp. pepper
- 1 Tbsp. skim milk
Method
- Beat chicken breast with mallet until 1/4-inch thick.
- Place 1 slice ham, diced tomato and 1 slice Mozzarella cheese on chicken breast.
- Roll up and place wood skewer or toothpick to hold roll. Dip in milk; roll in mixture of bread crumbs, Parmesan cheese and spices.
- Place on foiled baking (cookie or shallow) pan.
- Bake for 20 to 25 minutes.
- Serve with curried rice and steamed fresh green beans.
