Ingredients

  • 1 chicken, cooked, boned & diced Or possibly 2 (6 1/2 ounce.) cans cooked chicken
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 lg. baking potatoes (baked)
  • 3/4 c. grated Parmesan cheese
  • 6 slices Jack cheese
  • 1/2 c. lowfat sour cream
  • 1/2 c. mayonnaise
  • 2 tbsp. minced onion
  • 2 tbsp. bread crumbs

Method

  • Halve potatoes lengthwise and scoop out centers.
  • In a bowl, mix together chicken, Parmesan cheese, lowfat sour cream, mayonnaise, onion, salt and pepper.
  • Spoon mix into potato shells.
  • Place slice of Jack cheese on top and sprinkle with bread crumbs.
  • Bake at 350 degrees for 30 min.
  • Yield: 4 servings.
