Ingredients

  • 1 lb. pork sausage
  • 1 lb. mushrooms, sliced
  • 1 large onion, chopped
  • 4 whole chicken breasts or 2 1/2 to 3 lb. chicken, cooked, boned and cut in bite-size chunks
  • 1 (6 oz.) box Uncle Ben's wild and long grain rice (not instant, seasoning packet reserved)
  • 1/4 c. all-purpose flour
  • 1/2 c. heavy cream
  • 2 1/2 c. chicken broth
  • salt and pepper to taste

Method

  • In large skillet or Dutch oven, saute sausage over medium-high heat about 5 to 10 minutes or until cooked through; drain and set aside.
