Ingredients
- 1 1/2 lb. squash, diced
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 3 c. cooked rice
- 2 beaten eggs
- 1/2 c. milk
- 1/2 c. mayonnaise
- 1 tsp. salt
- 1 tsp. pepper
- 1 c. grated cheese
- 1 c. chicken soup
Method
- Cook and drain squash.
- Combine with green pepper, onion, rice, salt, pepper, milk, eggs and mayo.
- Put in a greased casserole dish and bake 30 minutes at 350°.
- Makes 4 servings.
