Ingredients

  • 4 chicken breast halves, boned & skinned
  • 1/2 c. minced onion
  • 1 tbsp. vegetable oil
  • 16 ounce. jar meatless spaghetti sauce
  • 1 1/4 c. water
  • 1 green pepper, cut into short, thin strips
  • 1/2 teaspoon crushed oregano
  • 1/2 teaspoon crushed basil
  • 1 1/2 c. instant rice

Method

  • Cut chicken into 1 inch pcs.
  • Saute/fry chicken and onion in oil in skillet till lightly browned.
  • Add in remaining ingredients except rice; mix well.
  • Bring to a boil; stir in rice.
  • Cover and remove from heat.
  • Let stand 10 min or possibly till liquid is absorbed and rice is tender.
