Ingredients

  • 2 whole chicken breasts, skinned, deboned, cut into 4 pieces
  • salt and pepper
  • 1/3 c. flour
  • 1/4 c. olive oil
  • 1 minced garlic clove
  • 1 1/2 tsp. crushed oregano
  • 1 (14 oz.) can tomato wedges
  • 1 c. dry white wine
  • 1 c. fresh sliced mushrooms

Method

  • Salt and pepper chicken breasts and dip in flour.
  • Saute in olive oil until browned.
  • Add tomatoes, garlic, oregano and wine. Cook covered over medium heat for 25 minutes.
  • Add mushrooms. Cook for 15 minutes more.
  • Serve over white rice or pasta.
  • Serves 4.
