Ingredients
- 2 whole chicken breasts, skinned, deboned, cut into 4 pieces
- salt and pepper
- 1/3 c. flour
- 1/4 c. olive oil
- 1 minced garlic clove
- 1 1/2 tsp. crushed oregano
- 1 (14 oz.) can tomato wedges
- 1 c. dry white wine
- 1 c. fresh sliced mushrooms
Method
- Salt and pepper chicken breasts and dip in flour.
- Saute in olive oil until browned.
- Add tomatoes, garlic, oregano and wine. Cook covered over medium heat for 25 minutes.
- Add mushrooms. Cook for 15 minutes more.
- Serve over white rice or pasta.
- Serves 4.
