- 1 red bell pepper large, seeded and diced
- 1 red onion medium, chopped
- 1/4 cup golden raisins optional
- 2 tablespoons tomato paste
- 2 tablespoons water
- 1 1/2 teaspoons ground cumin
- 1 pinch paprika
- 4 boneless, skinless chicken thighs or about 2 lbs chicken thighs
- 2 tablespoons creamy peanut butter almond butter or cashew butter
