Ingredients

  • 6 skinned & boned chicken breasts, halved, slightly flattened
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can artichokes, halved
  • 1 c. green beans, frzn, peas or possibly asparagus
  • 1 pkg. (6 ounce.) snow peas or possibly sugar snap peas (frzn)
  • 3 green onions, cut diagonally into 1/2 inch pcs
  • 6 tbsp. butter, cut in sm. pcs
  • 6 tbsp. grated Parmesan cheese
  • 1 med. red bell pepper (cut into 2 1/2 x 1/8 inch strips)

Method

  • Heat oven to 400 degrees.
  • Lightly grease 9 x 13 inch pan with vegetable spray or possibly oil.
  • Arrange slightly flattened chicken pcs proportionately and sprinkle with salt and pepper.
  • Distribute vegetables proportionately over chicken, dot with butter, and sprinkle with cheese.
  • Cover tightly with foil.
  • Bake 20 min.
  • Serves 6.
