Ingredients

  • 1 chicken or chicken breasts
  • 2 carrots or more
  • 1 stalk celery or more
  • 1 onion (small)
  • 2 potatoes or more
  • salt and pepper
  • 1 can cream of chicken soup
  • 2 c. chicken broth
  • 1 Tbsp. cornstarch or more as needed

Method

  • Cut vegetables into pieces.
  • Place chicken, carrots, celery, onion, potatoes and seasoning in pot and add enough water to cover.
  • Boil until tender.
  • Debone chicken.
  • Line a casserole dish with pie crust.
  • Put chicken and vegetables in the casserole dish. Combine soup, broth and cornstarch.
  • Pour into pie shell.
  • Top with bread, bread crumbs or pie crust.
  • Bake at 350° for 1 hour.
