Ingredients
- 1 chicken (large fryer)
- 3 c. potatoes
- 2 c. carrots, sliced
- 1 c. onions, chopped
- 1 c. English peas
- 1/2 c. celery, chopped
- 1 tsp. salt
- 1 Tbsp. chopped parsley
- 2 Tbsp. cornstarch
Method
- Cook chicken, debone and reserve broth.
- Cut chicken in approximately 1-inch pieces.
- Put in large pan the potatoes, carrots, onions, peas and celery; cook until tender.
- Add 1 to 2 cups of broth and mix with cornstarch.
- Mix vegetables and 3 cups of cooked chicken.
- Pour broth, etc., over all and put in large baking dish.
- With mixture hot and bubbling, put biscuits on top and bake at 400° for 15 to 25 minutes or until biscuits are done and browned.
