Ingredients

  • 1 chicken (large fryer)
  • 3 c. potatoes
  • 2 c. carrots, sliced
  • 1 c. onions, chopped
  • 1 c. English peas
  • 1/2 c. celery, chopped
  • 1 tsp. salt
  • 1 Tbsp. chopped parsley
  • 2 Tbsp. cornstarch

Method

  • Cook chicken, debone and reserve broth.
  • Cut chicken in approximately 1-inch pieces.
  • Put in large pan the potatoes, carrots, onions, peas and celery; cook until tender.
  • Add 1 to 2 cups of broth and mix with cornstarch.
  • Mix vegetables and 3 cups of cooked chicken.
  • Pour broth, etc., over all and put in large baking dish.
  • With mixture hot and bubbling, put biscuits on top and bake at 400° for 15 to 25 minutes or until biscuits are done and browned.
