Ingredients

  • 1 c. broccoli, chopped
  • 1/3 c. onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 carrot, cut in thin strips
  • 3 Tbsp. oil
  • 2 c. chicken, cooked and cut up
  • 1/2 tsp. salt
  • 2 medium tomatoes, chopped (about 2 c.)
  • 4 c. macaroni shells
  • 1/3 c. Parmesan cheese, freshly grated
  • 2 Tbsp. parsley flakes, chopped

Method

  • Cook broccoli, onion, garlic and carrot, in oil, about 10 minutes in skillet, on medium heat, stirring frequently, until broccoli is crisp-tender.
  • Stir in chicken, salt and tomatoes. Heat about 3 minutes, until chicken is hot.
  • Spoon chicken mixture over macaroni.
  • Sprinkle with cheese and parsley.
  • Serves 6.
