- 2 c. water
- 2 (14 1/2 oz.) cans cajun-style stewed tomatoes
- 1/2 tsp. cajun seasoning
- 1/4 tsp. hot pepper sauce
- 2 garlic cloves, minced
- 1 medium onion, sliced
- 1/3 c. uncooked regular rice
- 1 (10 oz.) pkg. frozen cut okra, thawed
- 2 (15 oz.) cans black-eyed peas, drained
- 3/4 lb. (1 1/2 c.) medium size fresh shrimp, peeled and deveined
Method
- In a 6-quart Dutch oven, combine water, tomatoes, hot pepper sauce, Cajun seasoning, garlic and onion.
- Bring to a boil. Reduce heat; cover and simmer 20 minutes.
- Stir in rice and okra. Simmer, covered, an additional 15 minutes.
- Add shrimp and peas; cook until heated through.
- Makes eight 1 1/4-cup servings.
