Ingredients

  • 2 c. water
  • 2 (14 1/2 oz.) cans cajun-style stewed tomatoes
  • 1/2 tsp. cajun seasoning
  • 1/4 tsp. hot pepper sauce
  • 2 garlic cloves, minced
  • 1 medium onion, sliced
  • 1/3 c. uncooked regular rice
  • 1 (10 oz.) pkg. frozen cut okra, thawed
  • 2 (15 oz.) cans black-eyed peas, drained
  • 3/4 lb. (1 1/2 c.) medium size fresh shrimp, peeled and deveined

Method

  • In a 6-quart Dutch oven, combine water, tomatoes, hot pepper sauce, Cajun seasoning, garlic and onion.
  • Bring to a boil. Reduce heat; cover and simmer 20 minutes.
  • Stir in rice and okra. Simmer, covered, an additional 15 minutes.
  • Add shrimp and peas; cook until heated through.
  • Makes eight 1 1/4-cup servings.
