Ingredients

  • 2 Tbsp. oil
  • 2 to 2 1/2 lb. chicken, cut into serving pieces
  • 1 (10 oz.) pkg. frozen peas and carrots
  • 1 envelope Lipton golden mushroom soup mix with real chicken broth
  • 1 1/4 c. finely chopped parsley
  • 1 c. water

Method

  • In large skillet, heat oil and brown chicken; drain.
  • Add peas and carrots, golden mushroom soup mix and parsley blended with water.
  • Simmer, covered, 45 minutes or until chicken is tender. Serve, if desired, with hot mashed potatoes.
  • Makes about 4 servings.
