Ingredients

  • 1 lb ground chicken
  • 14 teaspoon black pepper
  • 18 teaspoon salt
  • 1 cup sliced red onion
  • 12 cup canned artichoke heart, drained, and coursely chopped
  • 14 cup diced tomato
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon fresh flat-leaf parsley
  • 10 green olives, pitted, and chopped
  • 12 cup diced fresh mozzarella cheese
  • 1 tablespoon fresh lemon juice
  • 8 bibb lettuce

Method

  • Heat a large nonstick skillet over medium high heat, and coat with cooking spray.
  • Add chicken, salt and pepper to pan, cook for 3 minutes stirring to crumble.
  • Stir in onion and the next 5 ingredients up to and including olives, cook for 3 minutes or until chicken is done.
  • Stir in cheese, and lemon juice.
  • Spoon 1/4 mixture into each lettuce leaf.
