Ingredients

  • 1 beaver tail
  • salt
  • 2 potatoes, cubed
  • 1 celery stalk with leaves, sliced
  • 2 carrots, sliced
  • 1 large onion, sliced
  • pepper
  • 1 tsp. garlic powder
  • bay leaf

Method

  • Place the beaver tail in the oven and heat at 350° until the skin puffs and peels.
  • Remove the tail and boil it in lightly salted water until the meat falls away from the bone.
  • Discard the bone and cut the meat into cubes.
  • Return the meat to the stock, add the carrots, potatoes, celery and onion.
  • Add pepper to taste, garlic powder and bay leaf.
  • Simmer gently until the carrots are tender.
