Ingredients

  • 1 can chicken breast
  • 1 (8 ounce) package cream cheese, softened
  • 14 cup mayonnaise
  • 14 cup milk
  • 2 tablespoons minced jalapeno peppers (or more if you'd like it hotter)
  • 1 tablespoon lemon juice
  • 14 cup minced red bell pepper
  • 14 cup minced onion
  • 1 can Mexican-style tomatoes (I use Rotel Mexican)
  • 34 teaspoon salt

Method

  • Drain chicken and tomatoes w/ green chilis well.
  • Combine all ingredients in baking dish.
  • Bake at 300 degrees for 20-25 minutes, just until top is slightly golden.
  • Serve with crackers, veggies, tortillas or on croissaints.
