Ingredients
- 1 chicken
- 2 qt. water
- 1 large onion
- 2 stalks celery
- 1 carrot
- salt and pepper
- 1 c. rice
- 2 eggs, at room temperature
- 1/3 c. fresh lemon juice
Method
- Boil the water.
- Add chicken, onion, celery, carrot, salt and pepper.
- Cover and simmer for 2 hours.
- Strain the broth.
- Remove bones and the skin.
- Chop the meat and the vegetables.
- Add to the boiling broth and the rice.
- Cover and cook 20 minutes or until tender.
- Salt to taste.
