- 1/4 c. butter
- 1/4 c. flour
- 1 c. chicken broth
- 2 c. milk
- 1 Tbsp. cornstarch
- 1 c. grated Cheddar cheese
- salt and pepper
- 6 chicken breasts
- 2 pkg. frozen broccoli
- bread crumbs
Method
- Cook chicken until tender. Cool, bone and slice. Save broth. Melt butter.
- Add flour and cook until smooth. Add broth, milk, cornstarch and cheese.
- Cook over low heat until sauce is smooth. Cook broccoli until tender.
- Place layer of broccoli in a 13 x 9-inch baking dish with florets turned out. Top with chicken, batter and bread crumbs.
- Sprinkle lightly with paprika.
- Bake at 350° until slightly browned.
