Ingredients

  • 1/3 c. Dijon mustard
  • 2 Tbsp. honey
  • 2 Tbsp. lime juice
  • 1 Tbsp. water
  • 1 1/2 tsp. grated lime peel
  • 4 skinless, boned chicken breasts
  • lettuce leaves

Method

  • Preheat oven to 350°.
  • Whisk together mustard, honey, lime juice, water and lime peel.
  • Place chicken in shallow ovenproof casserole. Set aside 1/4 cup mustard sauce.
  • Pour remaining sauce on chicken. Cover and bake 20 minutes.
  • Uncover.
  • Spoon sauce from casserole on top and continue to bake, uncovered, for 10 minutes or until completely cooked.
  • Arrange chicken on lettuce leaves. Add 2 to 4 tablespoons of remaining sauce from casserole to reserved sauce and heat through.
  • Pour over chicken and serve. Serves 4.
  • Preparation time is 15 minutes. Cooking time is 30 minutes.
