Ingredients

  • 4 chicken breasts, skinned and trimmed
  • 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1 can cream of chicken soup
  • 1/2 c. sour cream
  • 1 tsp. dried minced onion
  • 1 tsp. parsley flakes
  • 1 (6 oz.) pkg. sliced smoked ham
  • 1 (4 oz.) jar sliced mushrooms, drained
  • 1 c. coarse butter cracker crumbs

Method

  • Rinse chicken and pat dry.
  • Pierce with fork; sprinkle with salt and pepper.
  • Arrange with thicker portions toward outside in 8 x 12-inch glass dish.
  • Cover with vented plastic wrap.
  • Microwave on High for 8 to 9 minutes or until thickest portion is no longer pink, rotating dish 1/4 turn after 4 minutes.
  • Let stand, covered with foil, for 5 minutes; drain.
  • Combine soup, sour cream, onion and parsley flakes in 4-cup glass measure.
