Ingredients
- 4 skinless, boneless chicken breasts
- 1/4 c. flour
- 2 eggs
- 1 c. bread crumbs
- 1/2 c. Parmesan cheese
- 2 tsp. dried oregano
- 1/3 c. olive oil
- salt
- fresh ground black pepper
Method
- Pound cutlets to approximately 1/8-inch thick.
- Dust cutlets with flour; shake off excess.
- Beat eggs in a bowl.
- Mix bread crumbs, cheese and oregano in another bowl.
- Dip cutlets in egg, then in bread crumb mixture.
