Ingredients

  • 1/2 c. margarine or butter
  • 2 cloves garlic, crushed
  • 1/2 c. all-purpose flour
  • 1 tsp. salt
  • 2 c. milk
  • 2 c. chicken broth
  • 2 c. shredded Mozzarella cheese (about 8 oz.)
  • 1/2 c. grated Parmesan cheese
  • 1 medium onion, chopped (about 1/2 c.)
  • 1 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • 1/4 tsp. pepper
  • 8 oz. uncooked lasagne noodles (9 or 10 noodles)
  • 2 c. (16 oz.) creamed cottage cheese
  • 2 c. cut up cooked chicken
  • 2 pkg. (10 oz. each) frozen chopped spinach, thawed and well drained
  • 1/2 c. grated Parmesan cheese

Method

  • Heat margarine in 2-quart saucepan over low heat until melted; add garlic.
  • Stir in flour and salt.
  • Cook, stirring constantly, until bubbly.
  • Remove from heat.
  • Stir in milk and broth.
  • Heat to boiling, stirring constantly.
  • Boil and stir 1 minute.
  • Stir in Mozzarella cheese, 1/2 cup Parmesan cheese, the onion, basil, oregano and pepper.
  • Cook over low heat, stirring constantly, until Mozzarella cheese is melted.
