Ingredients
- 1 (9-inch) baked pie shell
- 3 Tbsp. cornstarch
- 1 c. milk
- 1 Tbsp. grated lemon rind
- 1 c. sour cream
- 1 c. sugar
- 1/4 c. lemon juice
- 1/4 c. butter
- 3 egg yolks
Method
- Combine sugar and cornstarch in saucepan.
- Add butter, lemon rind, lemon juice and egg yolks.
- Stir in milk.
- Cook over medium heat, stirring until thick.
- Cool.
- Fold in sour cream.
- Spoon into baked pie shell and chill at least 2 hours.
- Serve with whipped cream and 2 tablespoons chopped nuts if desired.
