Ingredients
- 1 c. cooked rice
- 1 c. cooked chicken, cut up
- 3/4 c. chopped celery
- 1/4 c. slivered almonds
- 1 small onion, chopped fine
- 1/2 c. mayonnaise
- 1 can mushroom soup
- 1/2 tsp. salt
- 2 hard-boiled eggs, chopped
Method
- Mix all together and place in casserole overnight.
- Take out of refrigerator 30 minutes before baking.
- Bake for 40 minutes at 400°.
- Take out, cover with crushed potato chips and slip back into oven for 5 minutes.
- Serves 8 to 10.
- Can use leftover turkey in place of chicken.
