Ingredients

  • 1 c. cooked rice
  • 1 c. cooked chicken, cut up
  • 3/4 c. chopped celery
  • 1/4 c. slivered almonds
  • 1 small onion, chopped fine
  • 1/2 c. mayonnaise
  • 1 can mushroom soup
  • 1/2 tsp. salt
  • 2 hard-boiled eggs, chopped

Method

  • Mix all together and place in casserole overnight.
  • Take out of refrigerator 30 minutes before baking.
  • Bake for 40 minutes at 400°.
  • Take out, cover with crushed potato chips and slip back into oven for 5 minutes.
  • Serves 8 to 10.
  • Can use leftover turkey in place of chicken.
