Ingredients

  • 6 whole chicken breasts, cooked and cut up
  • 3 c. diced celery
  • 1/4 c. lemon juice
  • 1 c. sliced water chestnuts
  • 8 hard-cooked eggs, diced
  • 2 c. fresh mushrooms, sliced
  • 2 c. mayonnaise
  • 3 cans cream of chicken soup
  • 2 Tbsp. dried onion
  • 1 1/2 c. sliced almonds (reserve 1/2 c.)
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. pepper
  • 6 c. cooked rice
  • 1 small jar pimentos
  • 1 green bell pepper, diced
  • 2 tsp. curry
  • bread crumbs

Method

  • Mix all ingredients in large casserole dish.
  • Top with bread crumbs and more almonds.
  • Bake at 350° for 40 to 60 minutes.
  • It freezes well!
