- 6 whole chicken breasts, cooked and cut up
- 3 c. diced celery
- 1/4 c. lemon juice
- 1 c. sliced water chestnuts
- 8 hard-cooked eggs, diced
- 2 c. fresh mushrooms, sliced
- 2 c. mayonnaise
- 3 cans cream of chicken soup
- 2 Tbsp. dried onion
- 1 1/2 c. sliced almonds (reserve 1/2 c.)
- 1 1/2 tsp. salt
- 1 1/2 tsp. pepper
- 6 c. cooked rice
- 1 small jar pimentos
- 1 green bell pepper, diced
- 2 tsp. curry
- bread crumbs
Method
- Mix all ingredients in large casserole dish.
- Top with bread crumbs and more almonds.
- Bake at 350° for 40 to 60 minutes.
- It freezes well!
