Ingredients
- 1/4 c. chopped onion
- 1 c. sliced celery
- 1 Tbsp. soy sauce or to taste
- 1 Tbsp. butter or margarine
- 1 can cream of mushroom soup
- 1/3 c. chicken broth
- 2 c. diced chicken, cooked
- 3 drops Tabasco or to taste
- 1 c. chow mein noodles
- 1/3 c. cashews (optional)
Method
- Saute onion and celery in butter until crisp-tender.
- Add mushroom soup and broth; season to taste with soy sauce and Tabasco.
- Add chicken; simmer for a few minutes.
- Pour into a 1-quart casserole; sprinkle with noodles and nuts.
- Bake at 350° for about 20 minutes, until bubbly.
- Serve over rice.
