Ingredients

  • 1/4 c. chopped onion
  • 1 c. sliced celery
  • 1 Tbsp. soy sauce or to taste
  • 1 Tbsp. butter or margarine
  • 1 can cream of mushroom soup
  • 1/3 c. chicken broth
  • 2 c. diced chicken, cooked
  • 3 drops Tabasco or to taste
  • 1 c. chow mein noodles
  • 1/3 c. cashews (optional)

Method

  • Saute onion and celery in butter until crisp-tender.
  • Add mushroom soup and broth; season to taste with soy sauce and Tabasco.
  • Add chicken; simmer for a few minutes.
  • Pour into a 1-quart casserole; sprinkle with noodles and nuts.
  • Bake at 350° for about 20 minutes, until bubbly.
  • Serve over rice.
