Ingredients

  • 6 bone in skinless chicken thighs
  • 2 italian sweet peppers, seeded ans sliced
  • 1 medium onion, sliced
  • 8 button mushrooms, sliced
  • 4 clove garlic, minced
  • 1 28 ounce can whole italian tomatos
  • 1/4 cup dry white wine
  • 1/2 tsp black pepper and salt to taste
  • 1/2 tsp italian seasoning spice blend
  • 1 tsp hot sauce such as franks brand
  • 1/4 cup grated parmesan cheese and more for serving
  • 2 tbsp olive oil

Method

  • In a large deep skillet heat olive oil.
  • Season chicken with salt and pepper and brown both sides in hot oil.
  • Remove to a plate.
  • In same skillet add mushrooms, peppers, onions and garlic, saute 5 minutes Add white wine and reduce until almost gone.Add tomatoes breaking them up with a spoon add remaining ingredients except cheese, return chicken to skillet.
  • Cover and cook on low 45 to 60 minutes.
  • Transfer to a serving platter and sprinkle with cheese.
  • Serve with pasta or crusty bread for the extra sauce.
