Ingredients

  • 1 can water chestnuts
  • 1 c. mayonnaise
  • 1/2 tsp. curry powder
  • 1 c. grated Cheddar cheese
  • 2 cans cream of chicken soup
  • 4 Tbsp. lemon juice
  • 4 or 5 chicken breasts
  • 2 bunches broccoli

Method

  • Cook broccoli in water until tender.
  • Place broccoli in bottom of 13 x 9-inch pan.
  • Slice water chestnuts and place over broccoli.
  • Cook chicken at 400° for 1 hour.
  • Cool and dice; put over broccoli.
  • Blend remaining ingredients for sauce.
  • Pour over casserole and bake, uncovered, at 350° for half hour.
  • Cover with cheese and cook another 15 minutes.
