Ingredients
- 1 pound thin spaghetti (broken in half)
- 1 package frozen broccoli
- 2 cups cooked chicken
- 2 tablespoons butter
- 7 tablespoons flour
- 1 teaspoon salt
- 2 cups chicken broth
- 1 cup milk
- 1/2 cup Parmesan cheese
- 1 cup mozzarella cheese
Method
- Preheat oven to 400 degrees.
- In large saucepan melt butter.
- Add flour and salt, stir.
- Cook mixture for 1-2 minutes.
- Gradually whisk in chicken broth.
- Stirring constantly, bring mixture to a boil.
- Turn down heat, simmer for 2 minutes until thick.
- Remove from heat and stir in milk and Parmesan until cheese melts.
- When noodles are done cooking, put the frozen broccoli in the bottom of the colander before you drain the water.
- Pour hot water and noodles over broccoli and stir.
- Spread the cooked spaghetti and broccoli mixture in the bottom of a greased 9x13 dish.
- Pour half of sauce over it.
- Top with chicken pieces and then drizzle remaining sauce over the top.
- Top with mozzarella.
- Cover and bake 25 minutes. Remove foil and bake for an additional 5 minutes.
