Ingredients

  • 1 pound thin spaghetti (broken in half)
  • 1 package frozen broccoli
  • 2 cups cooked chicken
  • 2 tablespoons butter
  • 7 tablespoons flour
  • 1 teaspoon salt
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 cup Parmesan cheese
  • 1 cup mozzarella cheese

Method

  • Preheat oven to 400 degrees.
  • In large saucepan melt butter.
  • Add flour and salt, stir.
  • Cook mixture for 1-2 minutes.
  • Gradually whisk in chicken broth.
  • Stirring constantly, bring mixture to a boil.
  • Turn down heat, simmer for 2 minutes until thick.
  • Remove from heat and stir in milk and Parmesan until cheese melts.
  • When noodles are done cooking, put the frozen broccoli in the bottom of the colander before you drain the water.
  • Pour hot water and noodles over broccoli and stir.
  • Spread the cooked spaghetti and broccoli mixture in the bottom of a greased 9x13 dish.
  • Pour half of sauce over it.
  • Top with chicken pieces and then drizzle remaining sauce over the top.
  • Top with mozzarella.
  • Cover and bake 25 minutes. Remove foil and bake for an additional 5 minutes.
