Ingredients
- 1 Tbsp. vegetable oil
- 1 lb. skinless chicken, cut into strips
- 1 small onion, cut in 1-inch chunks
- 1 medium bell pepper or sweet red pepper
- 1 (10 1/4 oz.) can cream of broccoli soup
- 3 Tbsp. water
- 1 Tbsp. soy sauce
- hot cooked rice
Method
- In a 10-inch skillet over medium-high heat in hot oil, cook chicken, half at a time, until browned.
- Add onion and pepper; cook about 5 minutes, until vegetables are tender-crisp.
- Stir in soup, water and soy sauce.
- Heat to boiling.
- Reduce heat to low. Cover; simmer for 5 minutes.
- Serve over rice.
