Ingredients

  • 1 Tbsp. vegetable oil
  • 1 lb. skinless chicken, cut into strips
  • 1 small onion, cut in 1-inch chunks
  • 1 medium bell pepper or sweet red pepper
  • 1 (10 1/4 oz.) can cream of broccoli soup
  • 3 Tbsp. water
  • 1 Tbsp. soy sauce
  • hot cooked rice

Method

  • In a 10-inch skillet over medium-high heat in hot oil, cook chicken, half at a time, until browned.
  • Add onion and pepper; cook about 5 minutes, until vegetables are tender-crisp.
  • Stir in soup, water and soy sauce.
  • Heat to boiling.
  • Reduce heat to low. Cover; simmer for 5 minutes.
  • Serve over rice.
