Ingredients
- 6 chicken breast halves, boned and skinned
- salt and pepper
- 1 cube butter (not margarine)
- 2 Tbsp. lemon juice
- 1 c. heavy cream (whipping cream)
- 2 tsp. cornstarch
- grated Parmesan cheese
Method
- Lightly salt and pepper chicken breasts.
- Melt butter in skillet and saute chicken for 5 to 8 minutes, turning once to cook on all sides.
- Place chicken in ovenproof serving dish.
- Add lemon juice to butter in skillet.
- Stir cornstarch into cream and slowly add it into skillet mixture, stirring constantly, on low heat. Pour over chicken.
- Sprinkle with Parmesan cheese and broil until golden brown. Good with rice.
- Makes 4 to 6 servings.
