Ingredients

  • 6 chicken breast halves, boned and skinned
  • salt and pepper
  • 1 cube butter (not margarine)
  • 2 Tbsp. lemon juice
  • 1 c. heavy cream (whipping cream)
  • 2 tsp. cornstarch
  • grated Parmesan cheese

Method

  • Lightly salt and pepper chicken breasts.
  • Melt butter in skillet and saute chicken for 5 to 8 minutes, turning once to cook on all sides.
  • Place chicken in ovenproof serving dish.
  • Add lemon juice to butter in skillet.
  • Stir cornstarch into cream and slowly add it into skillet mixture, stirring constantly, on low heat. Pour over chicken.
  • Sprinkle with Parmesan cheese and broil until golden brown. Good with rice.
  • Makes 4 to 6 servings.
