Ingredients

  • 4 chicken breasts
  • 2 garlic cloves
  • 1/4 c. grated Parmesan cheese
  • 1/4 c. basil leaves
  • 1/4 c. olive oil
  • 1/8 tsp. salt
  • pinch of white pepper
  • 1 c. bread crumbs, seasoned with salt, pepper, dried marjoram and oregano
  • 1 egg, beaten with 1/2 c. milk
  • 1/4 c. flour

Method

  • Preheat oven to 350°.
  • Combine garlic, basil and olive oil in a blender or food processor.
  • After processing, add salt, pepper and Parmesan cheese.
  • Split chicken breasts lengthwise and spread with basil mixture and close.
  • Dip each breast in egg mixture and roll in mixture of bread crumbs and flour.
  • Heat 1/8-inch olive oil in skillet and saute breasts on each side until golden.
  • Place breasts in shallow baking dish; bake for 15 to 20 minutes.
