Ingredients

  • 1 large sweet onion
  • 1/4 c. butter
  • 1 1/2 c. corn muffin mix
  • 1 egg, beaten
  • 1/3 c. milk
  • 1 c. creamed corn
  • 1 c. sour cream
  • 1/2 tsp. salt
  • 1 c. grated Cheddar cheese

Method

  • Chop onion.
  • Saute slowly in butter.
  • Combine muffin mix, egg, milk and corn.
  • Put in buttered 9 x 12-inch casserole.
  • To onions, add sour cream, salt and 1/2 cup cheese.
  • Spread over corn meal batter.
  • Sprinkle with remaining cheese.
  • Bake at 425° for 35 minutes or until brown and set.
  • Cut in squares and serve warm.
