Ingredients
- 1 large sweet onion
- 1/4 c. butter
- 1 1/2 c. corn muffin mix
- 1 egg, beaten
- 1/3 c. milk
- 1 c. creamed corn
- 1 c. sour cream
- 1/2 tsp. salt
- 1 c. grated Cheddar cheese
Method
- Chop onion.
- Saute slowly in butter.
- Combine muffin mix, egg, milk and corn.
- Put in buttered 9 x 12-inch casserole.
- To onions, add sour cream, salt and 1/2 cup cheese.
- Spread over corn meal batter.
- Sprinkle with remaining cheese.
- Bake at 425° for 35 minutes or until brown and set.
- Cut in squares and serve warm.
