- 3 large split/boned chicken breasts
- 1/2 lb. fresh crabmeat
- 1/4 c. celery, chopped
- 2 Tbsp. fresh chives
- 1 c. cheese flavored croutons, crushed
- 1 c. mushrooms, chopped
- slight dash each: cinnamon, ginger, salt and lemon pepper
- 1 can cream of mushroom soup
Method
- Mix all ingredients together, except chicken and soup.
- Fill each chicken breast with mixture.
- Secure.
- Place, seam side down, in a 1 1/2-quart baking dish (rectangular).
- Place any extra filling between chicken breasts.
- Pour undiluted mushroom soup over all.
- Bake 1 hour at 350°.
- Garnish with parsley.
