Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 tsp turmeric
- 8 chicken pieces (thighs, legs and breast)
- 1 tomato, chopped
- 1 bunch of beetroot, peeled and thinly sliced
- Salt, to taste
- 1/2 cup of water
Method
Heat oil in a saucepan and fry onion until soft. Add turmeric and cook until the onion is yellow.
Add chicken and cook until browned. Add tomato and cook for a minute. Add sliced beetroot and salt.
Add water, cover and simmer for 10 minutes or until beetroot is tender and chicken is cooked through.
To serve
Serve with boiled rice.
