Ingredients

  • 1 lb. boneless chicken breast
  • 2 Tbsp. oil
  • 4 c. vegetables (broccoli, water chestnuts, bamboo shoots, red pepper, corn)
  • 1 1/2 c. chicken broth
  • 3 Tbsp. soy sauce
  • 2 Tbsp. cornstarch
  • 2 tsp. brown sugar
  • 1 tsp. garlic powder
  • 3/4 tsp. ground ginger
  • 2 bags Uncle Ben's boil-in-bag rice, cooked

Method

  • Stir-fry chicken in hot oil until browned.
  • Add vegetables and stir until crisp-tender.
  • Mix broth, soy sauce, cornstarch, brown sugar, garlic powder and ginger.
  • Add to skillet.
  • Bring to boil for 5 minutes.
  • Serve over rice.
  • Makes 4 servings.
