- 1 lb. boneless chicken breast
- 2 Tbsp. oil
- 4 c. vegetables (broccoli, water chestnuts, bamboo shoots, red pepper, corn)
- 1 1/2 c. chicken broth
- 3 Tbsp. soy sauce
- 2 Tbsp. cornstarch
- 2 tsp. brown sugar
- 1 tsp. garlic powder
- 3/4 tsp. ground ginger
- 2 bags Uncle Ben's boil-in-bag rice, cooked
Method
- Stir-fry chicken in hot oil until browned.
- Add vegetables and stir until crisp-tender.
- Mix broth, soy sauce, cornstarch, brown sugar, garlic powder and ginger.
- Add to skillet.
- Bring to boil for 5 minutes.
- Serve over rice.
- Makes 4 servings.
