Ingredients
- 1 c. chopped, cooked chicken
- 1/2 c. chopped celery
- 1 1/2 tsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 hard-cooked eggs, chopped
- 1/4 c. mayonnaise
- 5 slices bacon, cooked, drained and crumbled
- 2 Tbsp. chopped slivered almonds, toasted
Method
- Combine first 5 ingredients; toss lightly.
- Fold in eggs and mayonnaise; cover and chill 2 hours.
- Serve on leaf lettuce. Sprinkle with bacon and almonds.
- Makes 2 servings.
- Can be easily doubled.
