- 3 lb. chicken, cut up and boned
- 1/2 c. white vinegar
- 1/2 c. water
- 1 tsp. salt
- 1/4 tsp. black pepper
- 1 small bay leaf
- 3 cloves garlic, minced
- 1 tsp. ginger, grated
- 1 hot banana pepper
- 3 tsp. cooking oil
- 1/2 c. coconut milk
Method
- Place chicken, vinegar, water, salt, pepper, bay leaf, garlic, ginger and hot pepper in a saucepan.
- Simmer, covered, for 30 minutes or until chicken is tender.
- Drain, reserving sauce.
