Ingredients

  • 1/2 stick butter
  • 3 Tbsp. granulated sugar
  • 1 Tbsp. brown sugar
  • 1 cinnamon stick and 1/4 tsp. cinnamon
  • 1 Tbsp. orange peel (zest)
  • 1 (16 oz.) can pitted cherries (in syrup)
  • juice of 1 orange
  • juice of 1 lime
  • 3 Tbsp. cornstarch
  • 4 whole cloves
  • 1 to 2 oz. brandy
  • 1 qt. vanilla ice cream

Method

  • In a large, heavy skillet, melt butter.
  • Add sugars, cinnamon, zest and cloves.
  • Separate cherry juice and add cherries to pan. Heat 2 minutes, stirring constantly.
  • Add orange and lime juice and stir.
  • Add cherry juice and dissolved cornstarch.
  • Heat until thick.
  • Insert cloves into horseneck orange at intervals.
  • Heat brandy in ladle (if using gas stove) or in small pan (if using electric stove).
  • Flame and pour into pan.
  • Stir and serve over vanilla ice cream.
