Ingredients

  • 3 (46 ounce) bottles tomato juice
  • 2 12 lbs ground beef
  • 1 medium onion
  • 2 -3 garlic cloves, CHOPPED FINE
  • 12 large bell pepper, CHOPPED COURSELY
  • 2 (8 ounce) cans mushrooms, CHOPPED
  • 2 tablespoons oregano
  • 6 tablespoons olive oil

Method

  • Pour juice into large stockpot and turn on medium.
  • brown and drain ground beef.
  • empty beef into pot.
  • in the same skillet, add oil, onions, peppers, garlic, oregano and garlic - add garlic last to prevent becoming bitter.
  • saute until onions are nearly cooked through - add to pot, and simmer for 2 hours (or more) serve over your favorite pasta.
