Ingredients
- 3 (46 ounce) bottles tomato juice
- 2 12 lbs ground beef
- 1 medium onion
- 2 -3 garlic cloves, CHOPPED FINE
- 12 large bell pepper, CHOPPED COURSELY
- 2 (8 ounce) cans mushrooms, CHOPPED
- 2 tablespoons oregano
- 6 tablespoons olive oil
Method
- Pour juice into large stockpot and turn on medium.
- brown and drain ground beef.
- empty beef into pot.
- in the same skillet, add oil, onions, peppers, garlic, oregano and garlic - add garlic last to prevent becoming bitter.
- saute until onions are nearly cooked through - add to pot, and simmer for 2 hours (or more) serve over your favorite pasta.
