Ingredients
- 4 large baking potatoes
- 4 slices bacon
- 1/3 c. chopped onion
- 1/3 c. diced green pepper
- 2 c. sliced mushrooms
- 1 1/2 c. grated Cheddar cheese, divided
- 2 Tbsp. butter or margarine
- 1 egg, slightly beaten
- 1 tsp. salt
Method
- Scrub potatoes.
- Pat dry.
- Pierce with a fork.
- Bake at 425° for 55 to 65 minutes or until soft.
- Meanwhile, saute bacon in a skillet until brown.
- Cool and crumble.
- In 2 tablespoons of bacon drippings, cook onions and green pepper until still tender-crisp. Add mushrooms.
- Continue sauteing until mushrooms are cooked.
- Set aside.
