Ingredients

  • 4 large baking potatoes
  • 4 slices bacon
  • 1/3 c. chopped onion
  • 1/3 c. diced green pepper
  • 2 c. sliced mushrooms
  • 1 1/2 c. grated Cheddar cheese, divided
  • 2 Tbsp. butter or margarine
  • 1 egg, slightly beaten
  • 1 tsp. salt

Method

  • Scrub potatoes.
  • Pat dry.
  • Pierce with a fork.
  • Bake at 425° for 55 to 65 minutes or until soft.
  • Meanwhile, saute bacon in a skillet until brown.
  • Cool and crumble.
  • In 2 tablespoons of bacon drippings, cook onions and green pepper until still tender-crisp. Add mushrooms.
  • Continue sauteing until mushrooms are cooked.
  • Set aside.
