Ingredients
- 2 c. unsifted flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3/4 c. apple juice
- 1 1/3 c. (half 27 oz. jar) None Such ready to use mincemeat (regular or brandy and rum)
- 1 c. finely chopped apples
- 1/3 c. sugar
- 1 tsp. cinnamon
- 1 egg
- 1/3 c. vegetable oil
Method
- Preheat oven to 400°.
- Line 18 muffin cups with paper baking cups.
- In large bowl, combine all ingredients; stir only until all ingredients are blended.
- Spoon equal portions into prepared muffin tins.
- Bake 18 to 20 minutes.
- Cool 1 minute; remove from pan.
- Top with Apple Cinnamon Glaze.
- Serve warm.
- Store covered at room temperature.
