Ingredients

  • 2 c. unsifted flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. apple juice
  • 1 1/3 c. (half 27 oz. jar) None Such ready to use mincemeat (regular or brandy and rum)
  • 1 c. finely chopped apples
  • 1/3 c. sugar
  • 1 tsp. cinnamon
  • 1 egg
  • 1/3 c. vegetable oil

Method

  • Preheat oven to 400°.
  • Line 18 muffin cups with paper baking cups.
  • In large bowl, combine all ingredients; stir only until all ingredients are blended.
  • Spoon equal portions into prepared muffin tins.
  • Bake 18 to 20 minutes.
  • Cool 1 minute; remove from pan.
  • Top with Apple Cinnamon Glaze.
  • Serve warm.
  • Store covered at room temperature.
