Ingredients
- 1 medium onion, chopped
- 2 Tbsp. oleo or canola oil
- 2 Tbsp. flour
- 2 c. chicken broth
- 1 medium head cooked cauliflower
- 2 c. milk
- 2 c. grated Cheddar cheese
- 3 Tbsp. dry sherry
- 1 Tbsp. chopped chives
Method
- In a large saucepan, heat onion in oil until opaque. Add flour.
- Cook 2 minutes. Slowly pour in broth. Cook, stirring until thickened.
- Add cauliflower. Simmer 2 minutes. Stir in milk and cheese.
- Heat until cheese melts.
- Stir in sherry. Garnish with chives.
