Ingredients
- 1/2 lb. sweet butter (room temperature)
- 1/2 c. confectioners sugar
- 1 egg yolk
- 1 tsp. vanilla
- 1 tsp. brandy
- 1/4 c. almonds, toasted and chopped fine
- 2 1/2 c. flour, unbleached
Method
- In a large bowl, whip the butter until light and fluffy.
- Add confectioners sugar
- and beat an additional 5 minutes.
- Add egg yolk, vanilla and brandy and beat for 10 minutes.
- Add almonds and flour and mix well.
- Knead for a few minutes.
- Pat dough to 1/4-inch thickness and cut with cookie cutter.
- Bake in a 375° oven for 15 to 20 minutes.
- Do not brown. Cool and sprinkle with confectioners sugar.
