Ingredients

  • 1/2 lb. sweet butter (room temperature)
  • 1/2 c. confectioners sugar
  • 1 egg yolk
  • 1 tsp. vanilla
  • 1 tsp. brandy
  • 1/4 c. almonds, toasted and chopped fine
  • 2 1/2 c. flour, unbleached

Method

  • In a large bowl, whip the butter until light and fluffy.
  • Add confectioners sugar
  • and beat an additional 5 minutes.
  • Add egg yolk, vanilla and brandy and beat for 10 minutes.
  • Add almonds and flour and mix well.
  • Knead for a few minutes.
  • Pat dough to 1/4-inch thickness and cut with cookie cutter.
  • Bake in a 375° oven for 15 to 20 minutes.
  • Do not brown. Cool and sprinkle with confectioners sugar.
