Ingredients

  • 1 head cauliflower (cut into florets)
  • 1 tsp. salt, divided
  • 1/4 c. butter or margarine, melted
  • 24 saltines, crushed
  • 1 Tbsp. sugar
  • 1/2 tsp. pepper
  • 1/2 c. green pepper, diced
  • 1 (14 1/2-oz.) can diced tomatoes
  • 1 medium onion, chopped
  • 1 1/2 c. (6-oz.) shredded sharp cheddar cheese

Method

  • Cook cauliflower in boiling water to cover with 1/2 teaspoon salt for 5 minutes, drain. In a large bowl, stir together 1/2 teaspoon salt, butter, crackers, sugar and pepper, mix well. Stir in cauliflower, bell pepper, tomatoes, onion and 1 1/4 cups cheese. Spoon into a lightly greased 2-quart baking dish. Sprinkle with remaining cheese. Bake at 350 degrees for 1 hour. Serve immediately.
