- 6 skinned, pan-dressed catfish (fresh or frozen)
- 1 c. dry breadcrumbs or croutons
- 3/4 c. grated Parmesan cheese
- 1/4 c. chopped parsley
- 1 tsp. paprika
- 1/2 tsp. whole oregano
- 1/4 tsp. leaf basil
- 2 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. melted butter or margarine
- lemon wedges
- parsley sprigs
Method
- Thaw frozen fish.
- Clean, wash and dry fish.
- Combine breadcrumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper.
- Dip catfish in butter and roll in crumb mixture.
