Ingredients

  • 2 1/2 to 3 lb. chicken, cut into 8 pieces
  • 4 Tbsp. flour
  • 4 Tbsp. oil
  • 1/4 c. finely chopped onion
  • 1/4 c. finely chopped celery
  • 1 Tbsp. finely chopped green pepper
  • 1 1/2 c. chopped canned or fresh tomatoes
  • 1/4 tsp. oregano, crumbled
  • 1 1/4 tsp. salt
  • 1/2 tsp. ground pepper

Method

  • Preheat oven to 325°.
  • Wash and dry the chicken pieces and lightly dust with flour.
  • Heat oil in skillet and quickly brown the chicken pieces.
  • Put chicken into casserole with lid; add the remaining ingredients.
  • Cover and bake 1 hour.
