Ingredients
- 2 1/2 to 3 lb. chicken, cut into 8 pieces
- 4 Tbsp. flour
- 4 Tbsp. oil
- 1/4 c. finely chopped onion
- 1/4 c. finely chopped celery
- 1 Tbsp. finely chopped green pepper
- 1 1/2 c. chopped canned or fresh tomatoes
- 1/4 tsp. oregano, crumbled
- 1 1/4 tsp. salt
- 1/2 tsp. ground pepper
Method
- Preheat oven to 325°.
- Wash and dry the chicken pieces and lightly dust with flour.
- Heat oil in skillet and quickly brown the chicken pieces.
- Put chicken into casserole with lid; add the remaining ingredients.
- Cover and bake 1 hour.
