Ingredients

  • 1 1/2 c. flour
  • 1 c. sugar
  • 1 tsp. baking powder
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 2/3 c. oil
  • 2 eggs
  • 1 c. shredded raw carrots
  • 1/2 c. crushed pineapple, not drained
  • 1 tsp. vanilla

Method

  • In large bowl, mix dry ingredients.
  • Add oil, eggs, carrots, pineapple and vanilla.
  • Mix until all ingredients are moistened. Beat with mixer 2 minutes (medium speed).
  • Pour into greased and floured 9 x 9 x 2-inch pan.
  • Bake at 350° for 35 minutes.
  • Frost with cream cheese frosting.
  • Sprinkle with pecans.
