Ingredients
- 1 1/2 c. flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 2/3 c. oil
- 2 eggs
- 1 c. shredded raw carrots
- 1/2 c. crushed pineapple, not drained
- 1 tsp. vanilla
Method
- In large bowl, mix dry ingredients.
- Add oil, eggs, carrots, pineapple and vanilla.
- Mix until all ingredients are moistened. Beat with mixer 2 minutes (medium speed).
- Pour into greased and floured 9 x 9 x 2-inch pan.
- Bake at 350° for 35 minutes.
- Frost with cream cheese frosting.
- Sprinkle with pecans.
