- 4 cups chicken, cooked and cut into chunks
- 2 tablespoons of lemon juice
- 2/3 cup almonds or water chestnuts, finely chopped
- 1 teaspoon salt
- 3/4 cup mayonnaise
- 1 can cream of chicken soup
- 1 teaspoon onion, chopped
- 2 pimentos, chopped fine
- 2 hard boiled eggs, chopped
- 1 cup grated cheddar cheese
- 1 1/2 cups crushed potato chips
Method
- Combine all ingredients, except chips.
- Reserve some of the cheese and water chestnuts to be mixed with the crushed chips for the top.
- Place in large casserole.
- Top with chips, cheese and nuts.
- Refrigerate overnight.
- Bake in 400 degree oven for 20 to 25 minutes.
