Ingredients

  • 4 cups chicken, cooked and cut into chunks
  • 2 tablespoons of lemon juice
  • 2/3 cup almonds or water chestnuts, finely chopped
  • 1 teaspoon salt
  • 3/4 cup mayonnaise
  • 1 can cream of chicken soup
  • 1 teaspoon onion, chopped
  • 2 pimentos, chopped fine
  • 2 hard boiled eggs, chopped
  • 1 cup grated cheddar cheese
  • 1 1/2 cups crushed potato chips

Method

  • Combine all ingredients, except chips.
  • Reserve some of the cheese and water chestnuts to be mixed with the crushed chips for the top.
  • Place in large casserole.
  • Top with chips, cheese and nuts.
  • Refrigerate overnight.
  • Bake in 400 degree oven for 20 to 25 minutes.
